BBQ Cheeseburger Casserole (Vegan)

I tried veganizing this comfort fave of mine years ago but I was just a baby vegan and there wasn’t as many replacement options available. Thus, I have updated and nailed this new baby!

Ingredients:

  • Onion
  • Pepper
  • Minced Garlic
  • Impossible ground
  • Eggless egg noodles
  • Vegan sour cream*
  • Vegan cream cheese*
  • Vegan cheddar*
  • BBQ sauce
  • Ketchup
  • Salt/pepper to taste

Directions:

  1. Preheat oven to 350°F
  2. Sauté chopped onion and pepper in some oil and then add minced garlic (a couple tablespoons worth), salt and pepper
  3. Add the impossible and cook until brown
  4. Add bbq sauce and ketchup fairly equally until it forms a sloppy Joe type consistency and continue to cook for a few minutes
  5. After boiling the eggless egg noodles according to directions on the bag, add a container of vegan sour cream and a container of vegan cream cheese and mix until incorporated
  6. In a 13×9, add half of the noodle mixture, then half of the meat mixture, half of the vegan cheddar, and repeat
  7. Bake for about 15 minutes, you’re basically just making sure it’s all heated through and married in flavors
  8. Enjoy!

*I prefer WayFare vegan sour cream and vegan cream cheese

*I used WayFare vegan nacho cheddar with jalapeños, which is a sauce and not like shreds, so I microwaved it for just enough to make it liquidy enough to pour it on the casserole as I was making it
