Smothered Sweet Potato Fries w/ Homemade Salsa (Vegan)

I swear this is the last leftover crockpot refried beans recipe for a bit!

It’s been great having them around though to add extra protein and flavor to foods easily!

I wanted to do a homemade salsa too because the kind in the jar is loaded with sodium and isn’t that great anyways. This is just a basic recipe, you can certainly add other things to jazz it up, especially you cilantro loving folks!

Salsa Recipe:

Lightly spray onion, poblano, jalapeño, tomatoes and a few garlic cloves with Pamela and broil for a few minutes, turning the pan half way to get a little roast and char

Pulse in a blender a few times until desired consistency with a little lime juice and black pepper and voila! Salsa!

Fries:

Cut a few sweet potatoes into fry like shapes, drizzle a little oil, add seasonings like pepper, onion powder, garlic powder and paprika and bake in a 400°F oven for about 40 minutes, flipping halfway

Once those are done, add some salsa to some vegan refried beans and cover fries. Add vegan cheese and put back in the oven until cheese is melted and warmed through

Top with whatever else you’d like, I did more of the salsa, vegan sour cream and some jalapeño slices
