Easy Molletes (Vegan)

Y’all I’m still out here using up these crockpot refried beans! It’s been super handy having them around to add extra protein to all the things!

Directions:

Lightly toast some bolillo rolls (or any artisan bread really) that have been cut in a 400°F oven for a few minutes. Take them out, rub some garlic on them, a little vegan butter, then top with refried beans and vegan cheese. Back into the oven they go until vegan cheese is melty and/or the bread is toasty crispy. Add whatever toppings you want, I did some avocado and pico de gallo…enjoy!
