Cauliflower Hot Wings & Roasted Veggies (Vegan)

I just wanted to try this salt free hot wing sauce I found and then this dinner evolved to what it is now! I made a Buffalo style sauce with it and then made cauliflower hot wings with roasted veg and a random vegan ranch I threw together!

This is definitely one of my most favorite style meals; I mix it up with different sauces and veg but typically this is what I like to make or eat for weeknight dinners because there’s so much leftover too for lunches!

Cauliflower Hot Wings

Ingredients

  • Head of cauliflower, cut into florets
  • 1/2 cup flour
  • 1/2 tsp each garlic powder, onion powder, black pepper
  • 1/2 cup nondairy unsweetened milk
  • Panko
  • Sauce of your choice (this time I whisked a stick of vegan butter, 1 tsp garlic powder and 10oz salt free hot wing sauce on the stove to make a Buffalo style sauce)

Directions

  1. Preheat oven to 400°F
  2. Mix together the flour, seasonings and nondairy milk
  3. Pour over cauliflower florets and toss, then add panko and toss
  4. Bake for about 40 mins, flipping halfway
  5. Drizzle some of the sauce on top and toss, then put back in the oven for another 5 minutes
  6. Enjoy

Roasted Veg

Ingredients

  • Chopped vegetables (I used a couple red potatoes, sweet potato, carrots, celery, onion and broccoli this time)
  • Seasonings (1 tbsp Italian seasoning, 1 tsp each garlic powder, onion powder, black pepper)
  • Oil

Directions

  1. Preheat oven to 400°F
  2. In a 13×9, toss all the veg with oil and seasonings
  3. Bake for about 60-90minutes, depending on your veggies, make sure to stir it all up at least once during the cooking process, until your hardest veggie in the lot is soft
  4. Enjoy!
