
I had a little leftover from the Crockpot Cauliflower Tex Mex Bolognese and thought taquitos would be a perfect use for a lazy dinner!

With some homemade guac, of course! I usually just do 3 avocados, juice of 1 lime, pepper, garlic powder and onion powder
Ingredients:
- Corn tortillas
- Scrambled Eggs
- Shredded Cheese
- Tex Mex Bolognese (or you could always do like a pico de gallo or salsa)
Directions:
- Preheat oven to 375°F
- Mix together all of the ingredients except for the tortillas
- Fill each tortilla, roll up and place on a greased baking sheet
- Spray with a little extra Pamela and bake until crispy
- Enjoy!
