Tex Mex Breakfast Taquitos

I had a little leftover from the Crockpot Cauliflower Tex Mex Bolognese and thought taquitos would be a perfect use for a lazy dinner!

With some homemade guac, of course! I usually just do 3 avocados, juice of 1 lime, pepper, garlic powder and onion powder

Ingredients:

  • Corn tortillas
  • Scrambled Eggs
  • Shredded Cheese
  • Tex Mex Bolognese (or you could always do like a pico de gallo or salsa)

Directions:

  1. Preheat oven to 375°F
  2. Mix together all of the ingredients except for the tortillas
  3. Fill each tortilla, roll up and place on a greased baking sheet
  4. Spray with a little extra Pamela and bake until crispy
  5. Enjoy!
