Easy Jalapeño Popper Corn Salad

We had a cookout for my nephews birthday over the weekend and there was tons of leftover corn on the cobs from the grill.

Then my fiancé’s parents had leftover corns.

So I made this!

It’s great as a topping for the cookout foods but of course it is delish as the perfect side dish!

This is a rough recipe so definitely feel free to adjust to taste. You can also add bacon bits to kick it up a notch if you’re getting wild!

Ingredients:

  • 4-5 cups corn
  • 2 jalapeños, seeded and diced
  • A few tablespoons of softened cream cheese
  • 1/4-1/3 cup sour cream
  • A handful of shredded cheese
  • Garlic powder, onion powder and black pepper to taste

Directions:

Mix ingredients together and store in the fridge for the flavors to marry then enjoy!
