Buffalo Cauliflower & Roasted Brussels Sprouts – Easy Weeknight Dinner

I love baked breaded cauliflower with sauces! I also love roasted Brussels sprouts, so it’s an easy way to get a ton of veggies for a fairly healthy weeknight dinner that really just requires cooking time but the prep is easy peasy!

I’ve been obsessed with this 410 BBQ seasoning from a local food truck! It’s a classic blend of the major players like garlic powder and onion powder. But you can certainly season with your favorite seasonings. Just like you can use whatever sauce you want for the cauliflower wings!

This time I tried this Buffalo Wild Wings sauce I found at Walmart. It was just ok. I wouldn’t buy it again but I would try other sauces of theirs though.

If you’re making this vegan, franks Buffalo sauce is accidentally vegan so that’s pretty dope!

Brussels sprouts are just halved and drizzled with olive oil and seasoning and then tossed until evenly coated and baked in the oven in a single layer on 420°F for 35-40 minutes, flipping halfway! Easy!

Buffalo Cauliflower Recipe:

Ingredients:

  • Large Head of Cauliflower
  • 1/2 cup flour with seasonings (I just used 410 BBQ seasoning but you can add whatever goes with your chosen sauce)
  • 2/3 cup nondairy milk
  • 1 1/2 cups panko
  • Buffalo sauce (or any other sauce you wanna try with this recipe)

Directions:

  1. Preheat oven to 420°F
  2. Cut cauliflower in florets
  3. Mix together the flour and milk and then mix it with the florets until fully coated
  4. Add panko and toss lightly until just coated, don’t mix too much or it’ll start falling off
  5. Bake in a single layer for 35-40 minutes, flipping half way
  6. Toss cauliflower in the Buffalo sauce and return to oven for just a few minutes to crisp it back up
  7. Enjoy!
