
My mother in law requested I make some sweets for the bake sale at her church. Needless to say, I was happy to make some tasty treats for Jesus!

Side note, I got these super cool Individual Cupcake Containers from amazon and this is the second time I’ve used them for one of her bake sales. They seem to be a huge hit with the church ladies and sell out fast!

The mini Oreos and chocolate drizzle on top are optional, but I was having fun and in the festive mood! Plus I had extra melted chocolate leftover from the Halloween Sugar Cookies I made for the sale too!

It’s an easy simple way to add a little pizzazz to your baked good! I also used these Rainbow cupcake liners from amazon because if I’m making cupcakes for the Methodist church that is experiencing a lot of disaffiliation due to deciding to accept gay marriage finally, I figured why not give them a little pizzazz too!

Also this super cheap piping set from amazon has saved the day while all of our stuff is still in storage while we save for our first house!
Ingredients:
Cupcakes
- 1 1/2 cups flours
- 1/2 cup cocoa powder
- 1 cup sugar
- 1/2 tsp salt
- 1 tsp baking soda
- 1/4 cup + 2 tbsp vegetable oil
- 1 tbsp white vinegar
- 1 tsp vanilla extract
- 3/4 cup strong coffee
- 1/2 cup unsweetened almond milk
Icing
- 8oz softened cream cheese
- 1/4 cup softened butter
- 3 1/4 cups powdered sugar
- 2 tbsp heavy whipping cream
- 1 tsp vanilla extract
- 3/4 c finely crushed Oreos
*mini Oreos and melted chocolate as an optional topping decoration
Directions:
- Preheat oven to 350°F
- Mix together the flour, cocoa, salt, baking soda and sugar in a large bowl, then make 3 wells
- Add the vegetable oil in one well, vinegar in another and vanilla extract in the third
- Pour over the coffee and milk and mix until just combined
- Full 16 cupcake liners and bake 20 minutes
- Once cooled, make icing by beating the cream cheese and butter together and then slowly adding the powdered sugar, heavy cream and vanilla extract until incorporated
- Fill piping bag and decorate to your choosing
- Enjoy!

Whoops, the second time I wrote baking soda, I meant vinegar, I edited it so it should be fixed in the recipe now…good looking out! Thank you!
