Spinach & Artichoke Dip w/ Roasted Seasoned Potatoes for a Gluten Free Thanksgiving Appetizer Idea

Thanksgiving is less than a week away y’all! How’s that happen?! I had such big plans for such big recipes and I just ended up with this variation of an age old classic that always goes down easy with some family, friends and gratitude!

This is a gluten free and lower sodium version I made for a vegetarian thanksgiving idea. You can certainly make it vegan using replacements. I quite like WayFare sour cream and cream cheese and follow your hearts Parmesan is I were to make it for my dairy free friends!

I wanted to try and use less sodium because there’s already so much from the dairy and I gotta tell ya, with all the seasonings and spices, I did NOT realize we cut it down by more than half! It was definitely FULL OF FLAVOR! So that’s great for those watching their blood pressure!

Ingredients:

Roasted Seasoned Potatoes

  • 2.5 lbs potatoes, washed and chopped into roughly one inch sized cubes
  • 1 tsp each garlic powder, onion powder, paprika, black pepper
  • 1/2 tsp red pepper chili flakes
  • Olive oil

Spinach & Artichoke Dip

  • 1 red onion, diced
  • 15oz can artichoke hearts, drained and patted dry
  • 1/2 bag of baby spinach
  • 2-3 tbsp minced jarlic (the garlic in a jar)
  • 1 tsp each onion powder and black pepper
  • 8oz cream cheese
  • 1/3 cup sour cream
  • 1/4 cup Parmesan grated cheese
  • Olive oil

Directions:

  1. Preheat oven to 420°F
  2. Toss potatoes in olive oil and seasonings, then spread out on baking sheets in a single layer
  3. Bake 45 minutes to an hours, flipping half way (this just depends on how hot your oven runs honestly)
  4. In a large pan, sauté the onion in some olive oil and then add the artichokes
  5. Use your spatula to chop up the artichoke hearts a bit (or just do it with a knife before you put them in but less dishes for me)
  6. Then add the spinach, ripping it a bit in your hands as you add it (don’t worry, it’ll shrink down real quick)
  7. Add the rest of the ingredients and mix until warmed through (if you wanna get real wild, you can make it in an oven safe pan and add some cheese on top and put it in the oven until it gets melty and bubbly)
  8. Enjoy!
