
I was watching Timmy’s Takeout this weekend and ate Cracker Barrel for 10 meals and the Hashbrown casserole kept popping up. So I needed to make a copycat Cracker Barrel Hashbrown casserole but more healthy and less sodium.

I was originally thinking of making this Cracker Barrel Hashbrown casserole for Christmas morning breakfast but then I realized the Hashbrown casserole makes a great Christmas side dish too. We paired this Hashbrown casserole with a rotisserie chicken from the grocery store for an easy holiday dinner. The Nature Promise rotisserie chicken has no added sodium which is perfect for us.

While there is no salt added in this Cracker Barrel hashbrown casserole recipe, I made sure there was still a ton of flavor so I added a few ingredients like this Mushroom powder by Ellie’s best on Amazon.

But the Christmas paper plates from Amazon make clean up a breeze! Also, I highly recommend this Garlic Fresno hot sauce from hot ones. It’s not too spicy, adds a ton of flavor on so many dishes but pairs super well with this copycat Cracker Barrel hashbrown casserole. I put it on the chicken to add flavor without a ton of sodium.

I used mostly Swiss cheese because it has the least amount of sodium for cheese and melts super well. I did add some 4 cheese Mexican because I had it but I would normally use a Colby Jack. Ore Ida has a bag of shredded potatoes that’s only 25mg of sodium per serving so I used that but for even less sodium, you can use fresh potatoes.

Ingredients:
- 1 white onion, diced
- 6-8 mini sweet peppers, diced
- 1 bunch of green onion, chopped
- 1 1/2 cup plain nonfat Greek yogurt
- 1 can unsalted cream of chicken soup
- 1/2 cup unsalted butter, melted
- 1-2 tsp onion powder, garlic powder, paprika, black pepper, mushroom powder
- 8oz Swiss cheese, shredded
- 1 cup shredded Colby Jack
- 30 oz bag shredded potatoes, thawed
Directions:
- Preheat oven 350°F
- Mix together all of the ingredients, except save half of the cheeses for the top and half of the green onion for garnish
- Sprinkle the rest of the cheeses on top
- Bake 40-50 minutes until the cheese is melted a d starting to brown
- Garnish with the rest of the green onion and serve
- Enjoy!
