Giant Apple Pie Cinnamon Roll (Vegan)

I saw one of this couple minute videos on Facebook with the lame music….naturally I had to try it for myself but vegan style!

It’s kind of like an upside down cake where it’s flipped over afterwards with a super cute Apple decoration on top.

Ingredients:

  • Cinnamon Roll Dough:
    • 1 packet active dry yeast
      1/2 cup sugar
      Flax egg (1 tbsp ground flax seed + 4 tbsp water)
      1/3 cup softened vegan butter
      4 cups flour
      1/2 tsp salt

    Apple Topping:

    • 4-5 apples, peeled cored and cut in quarters
    • 1/2 cup sugar
    • 3/4 cup vegan butter

    Cinnamon Roll Filling:

    • 1/2 cup softened butter
    • 1 cup brown sugar
    • 3 tbsp cinnamon

    Directions:

    1. Mix together the yeast, sugar and warm oat milk, let sit for 5-10 minutes until the yeast begins to bloom. While you’re doing that, mix together the flax egg so it becomes gelatinous.
    2. Add the flax egg, softened vegan butter, flour and salt to the yeast mixture and using your dough hook, let your stand mixer go to town until the dough has come together. Form into a ball and put in a lightly greased bowl, cover and let rise for about an hour.
    3. In a non stick sauce pan, add sugar and let heat up on medium until it starts to caramelize, mix to incorporate and let it become an amber color before adding the vegan butter. Stir and then add the apples and let cook for about 5 minutes stirring occasionally.
    4. Once the apples have cooled a bit, layer in a greased tall sided cake pan on the bottom.
    5. Once the dough has risen, roll it out into a large rectangle. Spread the softened butter in an even layer and then sprinkle on the brown sugar and cinnamon. Cut into equally wide pieces and begin rolling one on top of each other to make a huge cinnamon roll. Place that on top of the apples in the pan and let rise again for about another half hour.
    6. Bake in a 350°F oven for about 40 minutes until browned.
    7. Flip out on to a plate and cut in slices and enjoy!

    *Mine didn’t turn out exactly like the silly video I saw fooled me to believe. My advice and what I will do next time is I’ll make regular cinnamon rolls using the above recipe but normal cinnamon roll size. Then I would make like a mock Apple pie filling on the stove with diced apples and just pour on top of the cinnamon rolls when they come out of the oven. I think it’d be easier that way but maybe you’d have more success than I since I didn’t have the right kind of pan.
