Spinach and Garlic Potato Cakes (Vegan)

This dish is like a latke meets gnocchi meets pierogi meets tator tot meets all the potato-y foods! I’m so pleased with how this turned out.

Super crispy outside with a fluffy luxurious inside, man, it’s so good y’all! I had a little vegan bang bang sauce with mine which I feel like elevated it perfectly.

  • 1 lb potatoes (about 3 1/2 cups chopped)
  • 1/4 cup plain unsweetened oat milk
  • 1 onion, diced
  • 6-8oz bag baby spinach
  • 4-5 cloves of garlic, minced
  • 1 cup vegan Parmesan
  • 1 1/2 cups crushed ritz crackers
  • Salt and pepper
  • Oil for frying


  • Boil potatoes, drain and mash with oat milk and some salt and pepper
  • Sauté diced onion for a few minutes, then add the spinach, garlic and salt and pepper until the spinach is just wilted
  • Add the onion/spinach mixture, vegan parm, crushed ritz to the mashed potatoes and mix…add a little more salt and pepper to taste if needed
  • Form into patties and throw in the fridge for a few minutes while you heat up the oil in a pan for a shallow fry
  • Fry the patties a few minutes on each side, let drain on paper towels after removing from the pan
  • Enjoy with whatever condiments you prefer
