My future mother in law gifted us a huge jar of apple butter from the orchard so I wanted to try and make something unique! I present to you, apple butter cookies! Gluten free and vegan too!

Ingredients:
- 1/2 tbsp ground flax meal + 2 1/2 tbsp water
- 1 3/4 cup bobs red mill gluten free 1-to-1 baking flour
- 1/2 tsp baking soda
- 1/2 tsp cream of tartar
- 1/4 cup vegan butter
- 1/2 cup apple butter
- 1 cup sugar
- 1 tsp vanilla
- Cinnamon and sugar for rolling
Directions:
- Mix together the flax meal and water and set aside
- Mix together the flour, baking soda and cream of tartar and set aside
- Cream the vegan butter, apple butter and sugar together
- Add the flax meal mixture and vanilla and mix
- Slowly add the dry ingredients until incorporated
- Chill for 2 hours or overnight
- Roll dough into balls and then into cinnamon and sugar and bake in a 375°F for 14 minutes
- Enjoy!
