Green Goddess Salad Dip (Vegan, GF)

I wanted to try TikTok’s viral green goddess salad as a dip for the football game but I also switched it up a bit so it’s nut free and what not too

Some no salt tortilla chips and this was perfection! I ate it with some grape tomatoes on the side and of course it paired well so I may add those next time right on there

Ingredients:

  • 2 lemons, juiced
  • 2 tbsp olive oil
  • 2 tbsp white vinegar
  • 1/2 red onion (1/2 diced, the other gets blended)
  • 2-3 tbsp minced garlic
  • 1/4 cup sunflower seeds
  • 1/2 cup fresh basil leaves
  • 1-2 cups baby spinach
  • 2 avocados
  • Bag of Cole slaw mix
  • 1 cucumber, peeled and diced
  • A bunch of green onions, finely chopped
  • Salt and pepper to taste

Directions:

  1. Blend the lemon juice, olive oil, vinegar, 1/2 of the red onion, garlic, sunflower seeds, basil, spinach, avocado and salt and pepper to make a thick dressing
  2. In a large bowl, combine the rest of the ingredients with the green sauce and you can enjoy it right away but I like to let it sit for the flavors to marry
  3. Enjoy!
