Sweet Potato Casserole Bites for an easy last minute Thanksgiving Potluck Recipe Idea

How cute are these little delicious rounds of fun?! Sweet potato casserole needs a little texture, so the pecans really pull it all together!

All you need it 3-4 sweet potatoes, peeled and cut into about 1/2 inch rounds. Then toss them in 1/4 cup melted butter, 2 tbsp maple syrup, 1/2 tsp cinnamon and a pinch of salt.

Bake on 420°F for about a half hour, flipping halfway!

Then turn the oven to broil and add a marshmallow on top of each and put back into the oven for just 15-20 seconds, or until just getting poofy and brown and then immediately remove and top with pecan halves!

That’s it!

They’re ooey gooey and I love them so much! You can certainly make them vegan with replacements! I do have a vegan marshmallow recipe or you can use dandies or Trader Joe’s! For the butter, any vegan version will do!
