I saw this picture floating around on Facebook and had to find out more!
Carleigh from @plantyou on Instagram uses this recipe as an edible cookie dough but I wanted to bake it and see what happens.
These super soft, decadent and almost fudgey-like cookies are a perfect pick me up to keep ya going throughout the day!

- 15oz can of chickpeas (garbanzo beans), drained and rinsed
- 1/2 cup peanut butter
- 1/4 cup maple syrup
- 1/2 tsp vanilla extract
- 1/4 cup enjoy life vegan chocolate chips
- Preheat oven to 350°F.
- Blend everything but the chocolate chips in a food processor and then stir them in afterwards.
- Bake for about 12-15 minutes.
