Chocolate Chip Protein Cookies (Vegan, GF)

I saw this picture floating around on Facebook and had to find out more!

Carleigh from @plantyou on Instagram uses this recipe as an edible cookie dough but I wanted to bake it and see what happens.

These super soft, decadent and almost fudgey-like cookies are a perfect pick me up to keep ya going throughout the day!

Ingredients:

  • 15oz can of chickpeas (garbanzo beans), drained and rinsed
  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup enjoy life vegan chocolate chips

Directions:

  1. Preheat oven to 350°F.
  2. Blend everything but the chocolate chips in a food processor and then stir them in afterwards.
  3. Bake for about 12-15 minutes.
  4. Enjoy!

    I am not a vegan but have tried my share of recipes to try and reduce sugar and flour in my diet. I have even tried using black beans in baked goods (to disappointing results). But these are DELICIOUS! And they really give you the cookie dough texture. I added a dash of salt and baking soda to try and make it further like a traditional cookie. Thank you for sharing!!!
